Spicy Chilli Bean Soup

Spicy chilli bean soup will warm you up on a cold afternoon.

Ingredients

400g can mixed beans (drained and rinsed)

400g can of chopped tomatoes

600ml vegetable stock

1 garlic clove (crushed)

1 tbsp tomato puree

1 tsp mild (or hot if you like the heat) chilli powder

½ tsp ground cumin

1 large onion (finely chopped)

1 tbsp olive oil

Salt and pepper to season.

Fresh basil leaves

Method

  • Fry the chopped onion in a little olive oil until they are translucent, add the crushed garlic and cook for a minute.
  • Pour in the chopped tomatoes and vegetable stock, add the tomato puree and sprinkle in the spices.  Stir until all the ingredients are combined. Simmer for 15 minutes uncovered.
  • Whizz using a hand blender until the soup is smooth.
  • Add the mixed beans and cook for another 15-20 minutes.
  • Season with salt and pepper and garnish with torn fresh basil leaves.

This chilli bean soup is delicious served with crusty bread.

Happy St. Patrick’s Day

irish-845398This month’s Home Bake Box celebrated St. Patrick’s Day with 3 themed bakes.  I’ve lived in the UK for the past 20 years and I still get homesick on St. Patrick’s Day. I remember going to mass followed by watching or taking part (I marched with the St John’s Ambulance first aid group) in the St. Patrick’s Day parade – I’ve lots of good memories of my childhood in Ireland.

My favourite recipe in the Home Bake Box was the Pot of Gold Cupcakes. These cupcakes were easy to bake and I had so much fun decorating them with marshmallow clouds, sour rainbow sweets and a chocolate caramel mini pot of gold.  They are so cute and taste yummy too.

The Fudgy Green Peppermint Brownies had a little too much peppermint in the frosting but the brownies tasted delicious, especially straight from the fridge.

I’m not a lover of Soda Bread but my friends enjoyed my baking and told me that it tasted ‘seriously good’.

Chocolate Chip Banana Muffins and Banana Loaf

This morning I caught the baking bug and I just had to use up my ripe bananas.  I love Mary Berry’s recipes so I decided to bake her chocolate chip banana muffins and her banana loaf. Yummy! ♥

Chocolate Chip Banana Muffins

Ingredients

100g butter, softened

2 eggs

175g caster sugar

225g self-raising flour

1 teaspoon baking powder

3 tablespoons milk

2 very ripe bananas, mashed

50g chocolate chips

For the icing: 50g melted dark chocolate

Method

  • Preheat the oven to 180C and line a 12 hole muffin tin with paper cases.
  • Measure the caster sugar, flour, baking powder, butter, milk, eggs and bananas into a bowl. Then beat the ingredients together until well combined.
  • Add the chocolate chips and mix well.
  • Spoon the mixture into the the muffin cases.
  • Bake for about 25 minutes until the muffins have risen and they are golden brown and  shrinking away from the cases.
  • Remove the muffin cases from the tin and allow to cool.
  • Melt the dark chocolate and drizzle over the muffins in a zigzag pattern.

Banana Loaf

Ingredients

100g Softened Butter
175g Caster Sugar
2 Large Eggs
2 Ripe Bananas (mashed)
225g Self Raising Flour
1 tsp. Baking Powder
2 tbsp. Milk

Method

  • Preheat the oven to 180C and lightly grease a 2lb loaf tin, then line it with baking parchment.
  • Measure the caster sugar, flour, baking powder, butter, milk, eggs and bananas into a bowl. Beat the ingredients together until well combined.
  • Spoon the mixture into the tin and level the surface.
  • Bake for approximately 1 hour, until well risen and golden brown.
  • Leave the loaf to cool in the tin for a couple of minutes, then turn out, peel off the parchment and allow the banana loaf to cool on a wire rack.

Slow Cooked Leg of Lamb With Rosemary and Garlic

Lamb is succulent and tender when it is slow cooked in a slow cooker. You will love the melt-in-the-mouth meat that falls off the bone. My recipe is incredibly easy and you can sit back, relax and let the slow cooker do all the work!

Ingredients

1 small bunch fresh rosemary (coarsely chopped)

3 cloves garlic (minced)

Zest of 1 lemon

olive oil

leg of lamb

sea salt

freshly ground black pepper

For the mint sauce

4 tbsp chopped fresh mint leaves

2 pinches salt

1 tsp sugar

3 tbsp wine vinegar

1 tbsp hot water

Method

  • Mix the chopped rosemary, minced garlic, lemon zest and olive oil together. Season the lamb with salt and pepper and rub the marinade into it.
  • Brown the lamb on all sides in a large frying pan.
  • Transfer the meat to your slow cooker. You don’t need to add any liquid – the lamb releases enough on its own.
  • Cook on low for 8 hours.
  • To make the mint sauce, mix the chopped mint, salt, sugar, wine vinegar and hot water.

This slow cooked leg of lamb with rosemary and garlic is delicious served with the homemade mint sauce and crispy roast potatoes and veg.

Home Pampering – My Lush Haul

Taking time out to pamper yourself can feel like an indulgence but it shouldn’t be a luxury, it’s really important to look after yourself.

Lush is one of my favourite stores – the intermingling gorgeous scents permeate the air, welcoming me in to choose the beauty products that make me feel pampered. I try to enter with a budget in mind and not succumb too much to the enticing range of products available. Today, I’m sharing with you my recent Lush haul.

Cup O’ Coffee – face and body mask

I adore the refreshing aroma of coffee and this mask certainly smells wonderfully fragrant. The Kaolin deeply cleanses impurities from the pores and ground coffee acts as a gentle scrub to buff away dryness and reveal the glowing skin beneath.  I applied it to my face and neck, relaxed for 15 minutes and rinsed with warm water, massaging the scrubbing coffee grounds away.  My skin felt super soft and invigorated.  This is now my favourite Lush product.  At £6.75 for 150ml it will last a few months, so it’s good value for money too.

Golden Handshake – hot hand mask

This promised a decadent soak for my dry hands. It coats hands in pampering warmth with a creamy argan and avocado oil mask.  You don’t need to use the whole hand mask at once, I cut it into thirds, then I boiled hot water and added enough to a bowl (large enough to fit both of my hands in comfortably) to cover the third of the hand mask; I stirred it with a spoon, allowing the treatment to develop and thicken. I made sure the mixture cooled down a little before I plunged my hands into its dreamy, creamy lotion and soaked for around 15 minutes. Oh wow! My hands definitely felt soft and hydrated. I love this product, especially as it is £2.95!

Bubblegum Lip Scrub

This bubblegum lip scrub smells like candy floss. I really like that it gently exfoliated and nourished my dry lips. I can’t stop licking my lips, it tastes good too! It is definitely worth £5.25.

Knitting for beginners

Yesterday I attended Stitch & Story’s beginners’ knitting workshop hosted at the Harris + Hoole coffee shop on Cannon Street London. It was a two-hour session dedicated to teaching the fundamentals of knitting. Suitable for beginners, the session aimed to teach newbies like me all the basics – how to cast on, knit, purl, and cast off.  I booked it through Groupon for the bargain price of £12.99 and all the equipment we used (needles and wool) and cake were included in the package.

Stitch & Story is an online shop which was founded by friends Jennifer Chan and Jen Hoang in 2012, I love that they aim to kick the old stigma associated with knitting by offering kits and tutorials to reflect current fashion trends and lifestyle products.

My biggest fear was that I would be absolutely hopeless at knitting, I had never tried before!  But I needn’t have worried at all, the tutors explained clearly what we needed to do and they were so patient when we needed further instruction and help. The group consisted of absolute beginners who’ve never touched a knitting needle (like me!), a lady who attended the previous week and wanted to learn more and those who wished to reignite their knitting skills. I did have to stand up and knit a few times as my fibro pain was a bother but I was determined to keep going because I loved it!  I learned how to cast on, knit, purl, rib stitch and how to cast off. It was so much fun, what could be better than a group of 12 ladies learning to knit whilst eating delicious cake?

I really enjoyed learning to knit and I’m going to try and knit my first scarf. I’m hoping that knitting’s peaceful, relaxing repetition will help me unwind after a busy day teaching and that it will be a distraction from the pain of Fibromyalgia. Also it will be a welcome retreat from a technology-saturated world.

Homemade Indulgent Chocolate Truffles

I love Heston Blumenthal’s simple chocolate truffle recipe. The chocolate truffles are an indulgent treat but be warned they are insanely addictive.

Ingredients

300ml double cream

300g dark chocolate, chopped (minimum 65% cocoa solids)

1 tsp salt

Cocoa powder

Method

  • Place the cream in a small pan over a medium heat and bring up to a simmer.
  • Chop the dark chocolate and tip into a large bowl. Melt the chocolate in a double boiler.
  • Remove the simmering cream from the heat, then add the salt.
  • Add the salted cream to the melted chocolate a third at a time, ensure that the cream is thoroughly combined after each addition. Allow to cool slightly.
  • Pour the chocolate mixture on to a lined tray. Allow to stand at room temperature for 4 hours, then place in the fridge for 5 hours or until set.
  • To shape the truffles, dip a melon baller in hot water and scoop up balls of the chocolate out of the ganache, then roll in cocoa powder before serving.
  • Store in the fridge in an airtight container for 3 days.

These homemade chocolate truffles are perhaps the most indulgent of chocolates with their silky soft ganache centre made with cream and dusted in the traditional way with cocoa powder. They are an ideal gourmet gift for your loved ones.

Hearty Chicken and Chorizo Broth

I watched James Martin make this hearty chicken and chorizo broth on his programme Home Comforts and I knew I had to try it!  There’s something comforting about a warm bowl of broth on a cold day; it nourishes the soul.  This spicy broth is deliciously wholesome; it’s a recipe that is perfect for the whole family to enjoy.

Ingredients

4 tbsp olive oil

1 onion, finely chopped

125g chorizo ‘picante’, outer membrane removed, finely chopped

6 boneless skinless chicken thighs, roughly chopped

800ml chicken stock

150ml double cream

50g butter

5 garlic cloves, finely chopped

2 sprigs fresh rosemary, leaves finely chopped

2 x 400g cans flageolet beans, drained and rinsed

½ tsp smoked hot paprika

1 small bunch fresh flat leaf parsley, leaves roughly chopped

Salt and freshly ground black pepper

Method

  • Heat 2tbsp of olive oil in a large frying pan. Add the onion and chorizo and fry for 3 minutes.
  • Add the chicken and fry for approximately 3 minutes.
  • Now add the garlic, rosemary, smoked paprika and beans.  Stir well to combine ingredients.
  • Pour in the cream and stock, add the butter and stir until the butter has melted, then bring the mixture to the boil.
  • Reduce the heat and simmer for 5 minutes, or until the chicken is thoroughly cooked.
  • Season with salt and freshly ground pepper and garnish with fresh parsley.
  • Ladle the broth into bowls and serve with homemade bread.

Nothing beats the chilly weather like a steaming bowl of chicken and chorizo broth.  It is nutritious, filling and packed with flavour.

Home Bake Box subscription

Home Bake Box is a fun baking subscription box, I like that I get to try something new every month and develop my baking skills.

Strawberry Specked Cupcakes

20160207_160656_FotorUsing real strawberry pieces in both the cakes and in the batter, I created delicious cupcakes and strawberry buttercream specked with red, and topped off with pink and red strawberry flavoured glitter sugar sprinkles.  These were baked in heart cupcake cases – so cute and perfect for Valentine’s Day.

Red Velvet White Chocolate Chip Shortbread

I emailed Abhi at Home Bake Box and she was so helpful, she kindly resent the ingredients but again they turned out more brown than red, the red food colouring did not make any difference. Some other people on social media said that they had the same problem. I was a little disappointed but the shortbread tasted lovely.

Raspberry and Rosewater Gateau

This gateau was delicious!  The rose water perfectly complemented the raspberries and the buttercream.

I enjoyed baking the cupcakes and the gateau and I’m already looking forward to my next home bake box. I can’t wait to see what baking challenge awaits me.

Homemade Smoked Paprika Wedges With Reduced Fat Sour Cream and Chive Dip

These homemade smoked paprika chunky wedges are a healthier alternative to fried chips.  They are perfectly crisp, tasty and so easy to make.  The reduced fat sour cream and chive dip is delicious too.

Ingredients

2 or 3 large baking potatoes

olive oil

1-2 tsp of smoked paprika

freshly ground black pepper and sea salt to season

Reduced fat sour cream and chive dip:

150ml pot of reduced fat soured cream

Freshly cut chives

Method

  • Preheat your oven to 200˚C. Put a large pan of salted water on to boil.
  • Scrub the potatoes and then cut into 8 chunky wedges.
  • Add the chunky wedges to the pan of boiling water and parboil for 8-10 minutes.
  • Meanwhile, make the sour cream and chive dip: Pour the soured cream into a small bowl, then add chives and stir. Chill the dip for 20-30 minutes before serving.
  • Drain the potato wedges and leave them to steam dry for a few minutes.
  • Transfer to a roasting tray and add the olive oil.  Sprinkle with the smoked paprika and then season with salt and pepper. Toss together ensuring that the potato wedges are coated with the olive oil, smoked paprika and seasoning, then spread out in a single layer.
  • Cook in the oven for approximately 30-35 minutes until they are golden, crisp and cooked through.

These homemade smoked paprika potato wedges are crispy on the outside and fluffy inside! They are perfect served with the reduced fat sour cream and chive dip. Satisfying every time!
